Pistachio Pesto is made exclusively from Sicilian pistachio nuts DOP (Protected Designation of Origin). Perfect for pasta, it can also be used to add flavour to main courses.
Often called “Sicily’s green gold”, Bronte pistachios account for just 1% of global production of the crop. The pistachio trees in Bronte grow in the volcanic soil of Mount Etna, where they draw their resources up through the soil, never relying on irrigation that would dilute the flavour of the pistachio. The harvest takes place every two years between late August and early September and it is a truly magical event that involves the entire population of Bronte: women, men, the old and the young ascend the heights to pick and shell this splendid fruit, one by one. An almost-sacred rite. Bronte Pistachios are not just desirable for their colour, flavour and texture but they are vastly different from pistachios grown in other parts of the world. Pistachios grown in the Middle East or California do not have the same soil or terroir, the combination of natural elements that contribute to Bronte pistachios characteristic taste and aroma.
