- Milk & Ingredients: Made from locally sourced pasteurized cow’s milk, salt, summer truffle (1%), natural flavouring, rennet, and lactic ferments.
- Rind & Paste: The rind is thin, light brown, and sometimes develops characteristic-coloured moulds. It’s treated with caramel colour (E 150a) and is not edible.
- The paste has a straw-yellow (“paglierino”) hue, with fine, evenly distributed eyes, contributing to its delicate and smooth texture.
- Maturation: The cheese is aged in underground cellars on racks made of white fir for 30 to 60 days, allowing the truffle aroma to infuse the paste naturally.
