Casera is a semi-hard cheese from the Valtellina region in Lombardy, northern Italy. Made primarily from cow’s milk, it is a key ingredient in the traditional dish Pizzoccheri. Casera is aged for at least 70 days, during which it develops a mild, buttery flavour with sweet, nutty undertones and a smooth, slightly elastic texture. As it ages, the flavour intensifies, becoming more robust and savoury, and the texture becomes firmer.
