Trussoni Grappa di Barolo Gialla is a refined Italian spirit crafted from the pomace of Nebbiolo grapes used in Barolo wine production. It is characterized by its light straw-yellow (gialla) colour, achieved through approximately 24 months of ageing in oak barrels.
Production and Origin
- Grape Source: The grappa is distilled from selected Nebbiolo pomace sourced from historic Barolo-producing municipalities in Piedmont, such as Serralunga and La Morra.
- Distillation Method: Distilleria Trussoni uses a traditional “discontinuous” method with small copper steam stills and a double-column demethylation process to ensure purity and preserve varietal aromas.
- Heritage: The distillery’s roots date back to 1885, with its founder, Francesco Trussoni, credited with creating one of the first single-varietal grappas.
Sensory Profile
- Appearance: A unique, brilliant light straw-yellow hue derived from its time in wood.
- Aroma: Intense and delicate with stratified notes of soft spices and elegant florals.
- Palate: It features a soft, velvety structure with a balanced warmth. Tasting notes highlight persistent flavours of dried fruit, harmonious woody notes, and a long, smooth finish.
- Alcohol Content: Typically bottled at 40% to 43% ABV depending on the specific release.
Serving Suggestions
- Ideal Pairings: This aged grappa is often served as a digestif after meals. It pairs well with dark chocolate desserts, aged cheeses, or can be enjoyed alongside a simple espresso.
- Serving Condition: It is best enjoyed at room temperature to fully release its complex bouquet of spices and wood.
