In Italy, it is considered good luck to eat Cotechino with lentils on New Year’s Eve, as this is believed to bring prosperity and good fortune in the coming year.

Ingredients:

    • Pork: Cotechino is made from a mixture of lean pork meat, pork fat, and sometimes pork rind (skin). The inclusion of rind gives the sausage a distinct texture and adds to its richness.
    • Seasonings: The meat mixture is seasoned with salt, pepper, and a variety of spices such as cloves, nutmeg, and cinnamon. Some recipes also include garlic and wine for added flavour.

Preparation:

      • Grinding and Stuffing: The pork and fat are coarsely ground and mixed with the spices. The mixture is then stuffed into natural casings, usually made from the pig’s intestines.
      • Curing: Unlike most sausages, cotechino is not aged or dried but is typically cooked fresh. However, it can be partially cured to help preserve it for a longer time before cooking.

Cooking Method: Dip the sealed bag in water, bring to a boil, and cook over low heat for 20 minutes. Remove the bag from the pot and cut the top corner of the bag, drain the gelatine. Open the bag completely, remove the Cotechino, slice it and serve on a hot plate.

Serving Suggestions:

    • With Lentils (Cotechino con Lenticchie): One of the most traditional ways to serve cotechino is with lentils, especially on New Year’s Eve. The lentils are said to symbolize wealth and prosperity for the coming year.
    • With Mashed Potatoes or Polenta: Cotechino is also commonly served with creamy mashed potatoes or soft polenta, which help balance the richness of the sausage.
    • As Part of Bollito Misto: In Northern Italy, cotechino is sometimes included in bollito misto, a traditional dish consisting of various boiled meats served with condiments.
